Family:  Mint (Lamiaceae)

Hardy to Zones 6 to 9.

(Headed Savory)  Evergreen perennial subshrub to 12 inches, native to the Mediterranean basin.  Dry slopes and calcareous soils create no stoppage for this tough little contender.  Large, purple, ball-like clusters of flowers feed bees and attract birds and other beneficial wildlife. Excellent in the stew pot (the herb, not the birds!)  Space plants 1 to 2 feet apart.

    My timo has come along nicely over the last couple years. It’s hands-down the most strongly flavored mint-family plant in my culinary collection—so potent that it will practically numb your tongue because it’s just that strong. And the flavor is very good. I made an exceptionally tasty mead using this herb alone, and a little went a long way. I should try it next time I need a sinus steam, as I am sure it would shine. The pink blossoms are cheerful and make me smile.

    I am in zone 10a, in the hills east of the San Francisco Bay. The plant is in a huge, sparingly watered container with other mint family herbs in full sun.
