Annual or biennial greens, 30 to 60 days
Mixed cooking greens consist of Beets, Spinach, Kale, Collards and Orach. In the spring, make a fine seed bed and sow seed sparsely in shallow furrows 1 foot apart. Barely cover with soil and tamp firmly, keeping evenly moist until germination. Thin to 3 inches between the plants and keep eating and thinning. I find that the 3 g packet does a 10 foot by 4 foot bed, and it comes up densely with the diverse greens. The cooking greens need plenty of water to keep them growing on and keep them from bolting.
