(Buckler-leaved Sorrel, French Sorrel)  Herbaceous perennial native to Europe.  This is the preferred type for culinary use, lending a lemony acidity to sauces and stir-fries.  Use sparingly, as the flavor is strong and pervasive, and the oxalic acid content calls for moderate use.  Traditional usage:  refrigerant, antiscorbutic.  Plant prefers sun to part shade and does well in marginal soils of garden or wayside.  Flowers to 2 feet tall.  Space plants 1 to 2 feet apart.
