(Buckler-leaved Sorrel, French Sorrel) Herbaceous perennial native to Europe. This is the preferred type for culinary use, lending a lemony acidity to sauces and stir-fries. Use sparingly, as the flavor is strong and pervasive, and the oxalic acid content calls for moderate use. Traditional usage: refrigerant, antiscorbutic. Plant prefers sun to part shade and does well in marginal soils of garden or wayside. Sow seed in spring, directly in the garden or in pots. Germination is fast and rampant. Thin or transplant to 1 to 2 feet apart. Flowers to 2 feet tall.
