Family: Goosefoot (Chenopodiaceae)
Annual. 100 days to maturity.
Self-seeding annual native to South America. “Brightest Brilliant” is a cultivar that produces flowering racemes of different colors: red, orange, yellow, pink and white to a height of 4 feet. Quinoa is one of the most highly productive food grains that can easily be grown by home gardeners in the temperate north. Both leaves and grain are edible. Grain is best rinsed thoroughly before cooking. One way is to put the grain loosely in a cotton bag and wash in washing machine, no soap, cold rinse and spin only. Cultivation: This plant does particularly well for gardeners in the North and for mountain gardens where nights are cold. Will tolerate light frosts. Plant prefers full sun and regular garden soil. Direct seed in spring and thin to 1 foot apart.
