(Fine-curled Chervil) Native to Europe, growing to about 12 inches and with a mounding habit. Fast-growing, ferny, anise-flavored green that does great in a cool garden setting or in pots or planters. Chervil has a reputation of repelling slugs, but at the same time it attracts almost every kind of beneficial insect and native pollinator, feeding them with sugary nectar through the winter months. The plants are petite and the flavor is very fine. It is a gourmet parsley-like plant that is used in seasoning vegetables, meat dishes, omelettes, soups, and for making salad dressing. The herb is experiencing a renaissance of popularity, and is very saleable in salad mixes or as a plant in a pot. Direct seed in the spring or fall garden.

I broadcast chervil in my front yard thinking I had phaecelia seeds. No matter–pollinators love the wee white blossoms of chervil as well. And it self-sows wonderfully, carpeting the ground in late winter, early spring, dying back in summer; I let it all settle in place and the seeds sprout in our fall rains (Washington state) so that greenery comes up in the fall, stays dormant over winter, and stirs back to life in spring. The self-perpetuation and cheerful, edible greenery happily covers the soil surface all year. I love Chervil!
