Family:  Lamb’s Quarters (Chenopodiaceae)

(Huazontle) Native to Mexico, this was one of the earliest domesticated crops, predating maize.  The seeds are bountiful, edible and delicious.  The red-tinted leaves are a good potherb.  Flowering to 5 feet, we suggest keeping the plants cut back (into the salad bowl) or allow to mature and collect the seed to make into gruel or grind for bread. There is also a Mexican practice of deep-frying the flower buds.  Plant prefers full sun to part shade and regular garden soils. Sow in spring.  Sow in a shallow finger furrow, barely cover seed and keep evenly moist until germination, which occurs in 1 to 2 weeks.

    Is the germination on huazontle similar the other kind of lamb’s quarters? Wondering if it is similarly finicky to germinate.

      Hi Alyssa, No, these are easy. But I hear ya, standard Lamb’s quarters is a real pickle to germinate as they are imbued with tons of inhibitors–they selfishly maintain their wild ancestry. But Red Aztec Spinach comes right up. Richo
