Family:  Pink (Caryophyllaceae)

Generally considered to be a self-seeding annual, these will nonetheless perennialize in Zones 7 and up.  60 days to harvest, 100 days to flower.

(Bladder Campion, Stridolo) An Italian heirloom, with toothsome, lance-shaped leaves giving rise to sprays of delightful, inflated flowers to a height of 18 inches.  The inflated calyx is pink to green, and the flowers are purely white.  The fresh leaves are used to flavor risotto, omelettes and sauces.  The flavor is mild and may be likened to tarragon.  This plant is extremely easy to grow from seed.  Sow in greenhouse in early spring and work up in pots, or sow directly in the garden bed in spring to early summer.  Given the unobtrusive nature of Sculpit, it works very well to companion with other species such as Echinacea, violets, etc.  Harvest the leaves with scissors–they will soon regrow for another pick!  Space plants 1 foot apart.

    I’ve been growing this “edimental” for years. It is ready to begin harvest early in the season many weeks before other greens can be planted in the garden, making it so useful during the Hunger Gap. It makes an amazing salad green, but is also delicious cooked with rice, eggs, or in soups. The lovely, delicate summer flowers are a bonus. I begin havesting for greens again in the early- to mid-fall, though I have also eaten the greens (cooked) throughout the season. Photo April 10th (zone 5, 4,600′ elevation, last frost here is May 10-15). Highly recommended.
