Hardy to Zones 8 to 12, otherwise grown as a potted plant and brought in for the winter

(White Ginger, Butterfly Ginger) Herbaceous perennial native to E. Asia and India, commonly found in the highlands of Hawaii, flowering to 3 feet. Emitting the scent of Gardenias, the flowers resemble a butterfly in flight and make a lovely garland for the hair.  The exotic-scented essential oil from flowers and roots is used in high end perfumes.  Rhizomes develop into large ginger roots that are good in cooking–tastes like mild yellow ginger (see photo of root grown in our greenhouse, which weighed in at 0.35 lb).  Plant prefers moist or boggy soils and full sun.

    I live in Spokane County, zone 6b. If I plant white ginger in a large pot outdoors in the late spring, how do I overwinter it? Bring the pot into the house or dig the rhyzomes and store them in peat moss in the root cellar?

      Hi Faith,
      Its my experience that the white ginger goes deeply dormant and is relatively easy to overwinter in soil in a pot.

    I’ve had my white ginger in a 3 gallon pot since I bought it from your nursery last year and it’s thriving. We’ve got plenty of boggy soils but I am concerned that this would rot in the ground over the winter (Port Orford, OR, zone 9b). I could plant it a bit higher up, but I’m concerned the soil won’t be wet enough in the summer. I’d love to get it in the ground but want to ensure that it survives the winter in the ground as well. Any advice would be appreciated! Thank you.

      I think you can plant this in the ground in port orford. Give it a moist, shady spot.

      White ginger is more aromatic and less pungent than yellow ginger.

      Hi Crissy,
      It isn’t really the same as yellow ginger (Z. officinale)–botanically related and medicinally quite different. I’ve tried to list the attributes of the white ginger (Hedychium) in the monograph for Ginger, White.
