Heirloom pole bean that reaches plump edibility in 55 days and matures dry on the vine in 90 days.  Standard vegetable culture.  Sow in the spring, directly in the garden.  Plant prefers full sun, rich soil and regular watering.  Although these may be allowed to sprawl they really do best if grown on a trellis, cage, or pole.  Providing a trellis keeps the weighty pods up off the ground, saves space in the garden, and keeps the pods clean for easy harvest.

    Bird Egg Bean Medley
    Shuck a nice pile of bird egg beans right when they are at their plumpest. Compost the empty pods. Get a frypan going on medium heat with a tablespoon of olive oil in it.   Peel a little garlic.  Chop the garlic and toss it in the frypan along with the beans.   Stir fry for a minute or two.  Salt the beans now and stir fry a bit more.  Add a small amount of water (1/2 cup and a couple of medium tomatoes (chop if you want) and cover and let simmer for 20 minutes.  Then add pieces of red pepper and a generous amount of sweet corn cut from the cob and steam more until corn is tender–maybe 5 to 8 minutes.  Serve over brown rice.  r
