(Bayam)  This is a drought- and heat-tolerant vegetable that is grown for the young red leaves that can be cooked up like spinach (as in vedic, african or greek cuisine).  Will add color to microgreens and mesclun mixes.   Can be sown in successions a few weeks apart.  In desert areas or tropics, shade the beds with latticework and sprinkle each evening with a little water.    In temperate zones plant prefers full sun and regular garden soil.  Direct seed in the spring garden.  Press in, keep evenly moist and in the light.   Thin to about 6 inches apart.  Eat the thinnings.
