Family:  Amaranth (Amaranthacea)

Annual.  50 days to harvest

(Bayam)  This is a drought- and heat-tolerant vegetable that is grown for the young red leaves that can be cooked up like spinach (as in vedic, african or greek cuisine).  Will add color to microgreens and mesclun mixes.   Can be sown in successions a few weeks apart.  In desert areas or tropics, shade the beds with latticework and sprinkle each evening with a little water.    In temperate zones plant prefers full sun and regular garden soil.  Direct seed in the spring garden.  Press in, keep evenly moist and in the light.   Thin to about 6 inches apart.  Eat the thinnings.

      Amaranths are full-sized plants, they need to be rowcropped with plenty of room on each side or planted to the back–we’re talking 4 or 5 feet tall.

      If you keep cutting the crown and leaves off to eat do they stay pretty small?

      Hi Lydia,
      Yes, I tried to take a picture of some younger plants to show that they make big leaves close to the ground. Really, it is like Spinach in that way. As I remember it, these get to about waist tall unless you keep them trimmed back. This kind of Amaranth is very leaf-productive and can really contribute as a foodstuff, growing well even in marginal conditions.
